Satay Chicken

Ingredients
1 tbsp pukara olive oil
1 red onion, finely sliced
2 garlic cloves, finely diced
2cm knob ginger, finely diced
1 tsp cumin
2 Nichols chicken breasts, cut into bite size pieces
2 tbsp kecap manis
¼ - ½ cup water
1 cup peanut butter
200g coconut cream
1 bunch broccolini, roughly chopped
2-3 Spring onions, to serve
Method
Step 1 into a pan over medium heat, add olive oil, onion, garlic, ginger and cumin. Saute until aromatic, approximately 5 minutes. Add chicken and saute for a further 5 minutes before adding kecap manis, water, peanut butter, coconut cream and broccolini. Simmer for 5 to 10 minutes of until broccolini is cooked.
Garnish with fresh spring onions.
